Although the traditional grilling recipes are great in their simplicity, sometimes you need some marinated meat items and vegetables in there to spice things up.
Yakitori is a great way to incorporate some alcohol into meat. Although you can always use wine, there is something about sake that makes it all the more exotic (apart from the name). Yakitori is one of the famous dishes that is known throughout the world that originated from Japan. To make this recipe you will need half a cup of sake, grated ginger, one lb of skinless and boneless cubed chicken meat, soy sauce, sugar, virgin coconut oil, crushed garlic and cut leeks. You can make yakitori in your own oven or the BBQ grill. The leeks are needed if you are making it inside the house. If you are going for the outdoor version then add your own pieces of ingredients like corn, carrot and some vegetables cut into pieces into the skewer.
To make the marinade mix together sake, sugar, garlic, ginger and soy sauce. Then add the meat and marinate for around 15 to 25 minutes. When you are making the dish put the pieces of chicken into the skewer and then gently baste with the marinade as it is frying or baking.
Chicken tikka masala
Originating from India, this recipe main ingredient can be changed as needed. The tikka masala marinade is based on yogurt and spices. The main ingredients needed are virgin coconut oil, minced garlic, yogurt, lemon juice (fresh), ground cumin, ground cinnamon, cayenne pepper powder, thinly chopped jalapeno pepper, paprika, heavy cream, tomato sauce, minced ginger and cut chicken pieces.
To make the recipe make the marinade by mixing together yogurt, lemon juice, 2 teaspoons cumin powder, 2 teaspoons cinnamon powder, 2 teaspoons cayenne pepper powder, pepper, ginger and salt for tasting. Then stir in the pieces of chicken, cover with a wrap and refrigerate for at least an hour. Afterwards take the pieces out and put them into the skewer along with other grilling ingredients and keep them on fire until the juice starts running. Meanwhile heat the oil, 2 teaspoons of cumin, paprika, garlic and jalapeno and sauté for 5 minutes. Add the tomato sauce and cream while stirring and reduce heat and simmer for 20 minutes. Then add the pieces of chicken into this mixture or pour over the chicken.
Barbecue meats can vary depending on you but the marinades usually suit most dishes. It is only the marinades that have an alcoholic base that changes depending on the type of meat used.
